Ingredients. (Serves 4).
8 large leeks (or celery heart or chicory)
100g/4oz Cheddar cheese
(grated)
8 slices cooked ham
25g/1oz butter
25g/1oz plain
flou
300ml/½pint milk
Salt and pepper
Method
1 Preheat oven mark 5. 190°C/375°F
2 Cook leeks in boiling salted water until soft. Drain thoroughly. Roll each in a slice of ham.
3 Arrange leek parcels in a shallow ovenproof dish.
4 Place butter, flour, milk, salt and pepper in a saucepan. Heat, whisking continuously, until the sauce thickens. Add the grated cheese. Coat ingredients in dish with the sauce.
5 Bake for 30 minutes until heated through and golden brown.
Tip: For a change, try substituting bananas for the cooked leeks. An exciting combination.
